I agree that the orientation of a skin is a very important consideration, however I prefer to cut skin with the orientation up and down, ( | ) this helps when you are trying to keep the tip from curling or wrinkling.  Also your fragmenting or separation from the chuck may be because your embedding medium has been frozen too long before you place your tissue on it. I think maybe the oct becomes a bit dehydrated and less stable when frozen for long periods because of the frost free components of the cryostat.  One more recommendation would be to make sure your knife is very sharp.  I prefer to use disposable in the cryostat since they are easily replaced.
