Per Alton Brown and any other cook that I have found to be amusing on Food Network, crust is supposed to be primarily flour and shortening ( insert lard depending on where you are at....) and a little bit of ice water to chill the crust so that it comes together and is nice and flaky when it comes out of the fridge and is rolled out.... personally right now it's apple season here in Minnesota.
