I too am grossing surgical tissues. We just passed our CAP inspection,
again. We think we have a good system.
1)	I've had each of the HTs personally tutored by a Pathologist.
2)	I've made a grossing manual that 
A)	Names the specific specimen types
B)	How each specimen shall be grossed, including inking.
C)	States that all Histologists have access to a Pathologist for
instructions and questions at any time.
D)	The types of specimens that should never be grossed by a
Histologist.
3)	A Pathologist reviews, evaluates, and documents our grossing each
month. (and every day via phone).
