Hello,
I have studied this pretty extensively.  I think that the minimum
counter width is 3.5 feet but optimally 4 feet.  The cutting surface
should be deep enough (about 30") so that supplies can be stored in bins
toward the back of the counter while space for labeling trimming, rack,
etc. can be toward the front. Good luck with your project Marcia.
