If your tissue processor menu shows temp, then processing is monitored, if 
you want to get fancy try recording each solution daily, including wax, but I 
think this is overkill, the second part of your question is your IHC controls 
, they are your QC verifying what worked, we keep a log or sheet for what did 
not work and reason why.
Have daily QC sheet for H&E, IHC, and special stains.
