As far as I am aware the only way to properly disinfect a cryostat is
to completely defrost it,  place a container of formaldehyde in it
overnight with the lid closed and then replace with  a container of
ammonia for 30 minutes the next morning.  Then,wearing gloves,
thoroughly wipe out the chamber with meths.  If you have to remove the
microtome wash it in meths and reassemble using the appropriate oil.

We always wear gloves when cutting frozen sections and when hand
mounting, some also wear gloves when embedding.

I have not used an open flame for embedding since 1981, like you we
find that three pairs of forceps in the wells of our Leica
Histoembedder are sufficient although many people in the UK use heated
forceps.
