This is a LARGE subject - cortical cytoarchitectonics,
and is the preserve of a few experts. For a small,
readable book try Braak, H. 1980. Architectonics of
the human Telencephalic Cortex. Berlin: Springer-Verlag.
There is also the 14-volume "The Cerebral Cortex"
edited by EG Jones and A Peters (1984- ) New York:
Plenum Press. The cytoarchitectonic chapters are
mostly in Vol 1.
