Have you tried cutting the 8X10 film in half?  Not quite 5X7 but its close. 
You can leave the other half in another cassette, or back in the bag (if not 
individually wrapped). Our Kodak processor accepts them at that size, by the 
way.  But I wouldn't go any smaller.
