I frequently cut frozens section on a permanent knife in a muli-user
facility.  I know how to sharpen the knife, but it gets dinged up and dull
quickly.  What is a good holder and good blades for disposable?  Also, is
the knife face as large as permanent?  I need to cut sections about 1 cm
square.  Also, would it be tremendously expensive to go to disposable?
