Joanne, 

It is possible to do this on a Thermo (now a different name) Shandon knife
sharpener, no other!  The extra set of sharpening plates should be reserved
for D profile TC only.  You cannot resharpen TC's indefinitely and
eventually knives will have to be sent off to DDK for a proper
reconditioning.  

I have a protocol in case I needed to do it, it is somewhat tedious, but
possible. It was sent to me by an expert in bone work.
