Bone histology

I am looking for ways to distinguish new woven bone from older,
more organized lamellar bone in samples taken from a repair site.
Although polarized viewing of hemotoxylin and eosin stained
samples does highlight the differences in collagen fiber organization,
the distinction is not drastic enough to lend itself to computer
thresholding algorithms.  Any suggestions?
