Mt. Sinai Hospital, in Toronto, has a hugh bone and mineral research group.
I worked there in the late '80's doing bone histomorphometry with
undecalcified bone biopsies in plastic.  I don't have the number with me but
if you would like to contact someone there let me know and I can get the
number and a contact person.  They might have the resources that you are
looking for, or at least recommendations for a good book.
