Dear Judi,
Lipids/fat stains are usually performed on frozen sections of tissues fixed
in neutral buffered formalin. As you already know fats are soluble in ethyl
alcohol so you would not be able to process the specimen first. Triglycerides
stain best with the Oil Red O stain and the Cholesterol will stain with
Schultz reaction. Both of these stains are found in the AFIP Laboratory
Methods in Histotechnology (red cover).
