PAS works well on rat and mouse. An Alcian Blue-PAS sequence often
shows a pink granule surrounded by a blue rim in the mouse. Eosin does
not work too well on mouse Paneth cells, if my memory serves me
correctly. Biebrich Scarlet at an alkaline pH, as John Kiernan mentioned,
is also worth a try if you have some around in the lab. Older editions
(2nd, 3rd) of Humason mentioned a "diazotized safranin" method to stain
both Paneth cells and enterochromaffin cells but I never tried it.
