Soak 24 hours in warm water, changing water several times.
Brush and clean thoroughly.
Cut underside, remove internal organs.
Rinse, cover with fresh water, simmer 4 hours, rinse thoroughly.
Separately shred pork, bamboo shoots, and sea cucumber.
Mince ginger root.
Cut scallion stalk in half-inch sections.
Stir-fry 2 to 3 minutes....
Oops - sorry - I picked up Gloria Bley Miller's _The Thousand Recipe Chinese
Cookbook by mistake....
