Is it vital that we reach a pH of 2.5 or is it usually "close enough" to just mix the solution as the recipe says?
The reason I ask is because pH 2.5 uses glacial acetic while pH 1.0 uses hydrochloric acid. It seems to me that is would be close enough to just mix it, that's what I've been told anyway. 

Thought I might ask the experts as you have a wealth of knowledge.
